Why can't I choose the day of the week on which I would like to observe the Sabbath (Rom 14:4-6; Gal 4:10-11)?

— Romans 14:4-6 and Galatians 4:10-11 do not refer to the weekly Sabbath day but to the observance of special days.

The context of Romans 14 shows that Paul was talking about Mosaic regulations on days and food (see Rom 14:2 on refraining from meat). Galatians 4:10-11 is even clearer in that it refers to the observance of special occasions prescribed in Old Testament regulations. Neither passage dismisses the importance of the seventh day Sabbath

— God was very specific about which day the Sabbath was. (Ex 16:23, 26; Ex 20:9-11; Deut 5:12-14).

The Bible never says to choose one day out of seven as a Sabbath and observe it. God appointed the seventh day from the beginning (Gen 2:1-3).
